Recipe. FOR 4 PEOPLE
4 large and succulent tomatoes, 2 cloves of garlic, 10 leaves of basil, capers in salt (as many as you like), 1 dried chili pepper, olive oil, salt and pepper. 200g (7 oz) smoked ricotta.
Wash tomatoes, cut into cubes and place in a tartare-style glass bowl. Mince the garlic, basil, chilli and capers and add to tomatoes. Sprinkle with a little oil, season with salt and pepper and mix well. Cover with plastic wrap and place into the refrigerator for 2 hours, then remove and, with the help of a mold, start forming a tower made of tomato. Carefully remove the mold, being careful not to ruin your creation, then grate some smoked ricotta on top and serve.
