Recipe. FOR 4 PEOPLE
3 fresh organic eggs + 50 g (1.75 oz) brown sugar + 250 g (9 oz) mascarpone cheese + puff pastries to be chopped + fresh strawberries.
Separate the egg yolks from the whites. In a bowl, put the egg yolks, 25 g (0.9 oz) sugar and beat with an electric mixer until the mixture gets smooth. Add the mascarpone cheese, stir and set aside. In another bowl, beat the egg whites with the other 25 g (0.9 oz) of sugar until stiff. Gently incorporate the egg whites to the yolks previously beaten and mix well, stirring with a spoon from the bottom up in order not to deflate the egg whites. Put the cream in the fridge to rest for at least 30 minutes. Wash the strawberries and cut them into thin slices. Take the puff pastries and crumble coarsely. Place some cream into the glasses, alternating with sliced strawberries and crumbled puff pastries. Continue until the glass is full. Remember that a dessert is always served with a sweet wine, possibly sparkling.
