I love this recipe!
Recipe. FOR 4 PEOPLE
4 Large potatoes + 2 tablespoons breadcrumbs + 1 tablespoon parsley + garlic + extra virgin olive oil + salt and pepper.
Preheat the oven to 200° C (392° F). In the meantime, peel and wash the potatoes, dry them well and with a sharp knife cut a piece of the base of the potatoes so that they fit snugly on the pan without falling down. With great care, insert the knife into the potatoes, stopping at about 1 cm/ 0.40 in from the end, trying to obtain slices as thin as possible. Place them on a baking tray lined with greaseproof paper and prepare the sauce by combining in a bowl a few tablespoons of breadcrumbs, parsley, minced garlic, olive oil, salt and pepper. With your magic hands, season the potatoes by inserting the dressing between a slice and the other, taking care not to break the slices. Before baking, add some oil over the surface and a pinch of salt. Bake in the oven for at least 1 hour (cooking time depends on the type and size of the potatoes) and at the end of the cooking time, turn on the grill to brown the surface. Uncork a bottle of wine and enjoy life.
