Red like passion, hot like fire. Serve a Prada soup and the rest will follow.
Recipe. FOR 4 PEOPLE
500g (17.5 oz) ripe tomatoes + 1 large onion + 3 carrots + 2 cloves of garlic + 1 teaspoon grated fresh ginger + 1 teaspoon mustard seeds + 1 tablespoon sweet paprika + a sprig of chopped fresh coriander + 1 teaspoon turmeric powder + extra virgin olive oil.
Put 2 tablespoons of oil in a saucepan and sauté the onion. Add all the spices (fresh ginger, mustard seeds, sweet paprika, fresh coriander and turmeric powder), garlic and carrots coarsely chopped. Peel the tomatoes, cut them and put them in the saucepan. Cook on low heat until the tomatoes have broken down. At this point, remove from heat and pass through a sieve. Pour the resulting liquid into a saucepan and simmer for another 15 minutes. Serve hot.
