Today’s recipe is inspired by the Hunter Original spring/summer collection. Can you imagine the smell of the artichokes mixed with that of fresh mint? Everything else on the table takes second place. Artichokes are like some people: they need to be handled with care because they can sting and hurt, but once you learn where and how to touch them, they will prove to be  very soft-hearted. And if they are flavored with mint, what else do you need? This easy-to-make recipe can be served as a main dish or as a side dish.

Recipe. FOR 4 PEOPLE

8 artichokes + fresh mint (I used 4 sprigs) + 1 clove minced garlic + 1 glass of white wine + olive oil + salt + pepper.

Clean the artichokes by removing the toughest outer leaves and keeping only the heart and 3 cm /1.2 in of stem. With a knife, cut the tips and soak in a bowl with water and the juice of one lemon. Let them sit for a few minutes (this will prevent them from becoming black). In a frying pan, put plenty of oil, the chopped garlic, then add the artichokes and sauté for 2 minutes, stirring with a wooden spoon. Add the white wine, mint leaves, salt and pepper. Cover with a lid and cook on low heat for 20-30 minutes or until the artichokes become soft. Keep some water at hand, to add if needed. Serve with chopped fresh mint leaves.
