“What was your hurry, damned spring…” Loretta Goggi

Last weekend I changed my winter wardrobe to my summer wardrobe. And of course the winter came back. Maybe I should have listened to the weather report to know that spring is still a mirage, but women are like that: if we make up our mind to do something, it’s very difficult to change our mind. Also because changing your winter wardrobe to your summer wardrobe is not exactly the best thing that can happen to you over the weekend. But between a sweater to be folded and a shirt to be ironed, I even found the time to take a break and read a magazine with the new trends for spring/summer. As soon as I saw this Jil Sander outfit, I realized that I would go easily from my bedroom to my kitchen. I opened the fridge and I felt suddenly inspired.  I baked a fresh ricotta cheese seasoned with some delicious tomato sauce that my mom always prepares for me (you can find the recipe by clicking here), some taggiasca olives, oregano and capers in salt. Should I tell you how good it is or you can immagine yourselves? I like to think that tonight, coming home after work, you will stop by to buy some bread, and all the necessary ingredients to prepare this easy and tasty recipe. The oven will do it all, and you’ll have time to relax while waiting for dinner to be ready. Enjoy.

Recipe. FOR 4 PEOPLE

1 loaf of bread + 4 fresh ricotta cheese + taggiasca olives + capers in salt + tomato sauce +  a teaspoon of oregano +  extra virgin olive oil + pepper.

Preheat the oven to 180° C (356°F). Grease a baking dish with a little olive oil (or if you prefer, use individual cups suitable for cooking in the oven), put a thick layer of tomato sauce and place the ricotta cheese. Season with olives, capers, oregano and pepper. Bake for 30 minutes. Before removing from the oven, toast the bread and serve. Bon appetit.
