“Age is not important unless you are a cheese.”

Only a woman could say that, I think men think differently. Anyway, did you know that cheese should be served only at lunch? It is rumored that it is not very chic if you serve it at dinner. Cheese ends the meal and always precedes dessert. Remember this, so you can criticize your worst enemy at her first mistake. How do you serve it?  It should be cut so that each guest has a slice with a part of the rind (when present). How do you eat it? Use just the knife to cut it into pieces and then put it on the bread and eat it with your hands. Exceptions are some types of cheese with a softer texture, such as ricotta, mascarpone and goat cheese, for which you need to use a fork to avoid to immediately transform yourself into a baby. Also remember that: you should serve it only once, starting from the freshest and sweetest to the most flavorful and aged.
