Risotto is wonderful; it is one of my favourite dishes. It is a very elegant dish, but sometimes difficult to eat. I have rarely been at the table with someone who was able to eat it properly. I have to thank my mother who has always prevented me from doing what comes naturally when you are a kid: spreading it out on the plate, and eating around the edges in a circle. Risotto is not a game! You should see what happens when you eat it in company: it’s a real mess! I ask you to bring style to the tables of the world, to be ambassadors of good manners and spread the culinary discipline. It’s all for a better future!
