Think about how many toasts you have done in your life, how many glasses you raised and clanged more or less gently, and all the times you’ve said “cheers” before drinking. Think about it. Do you remember? Good, you’ve broken all the rules of etiquette (but I’ll explain this later)! As long as the champion of good manners does not haunt you, feel free to express yourself as you wish. If you decide to follow the “Good Food in Good Fashion” route, which will take you to 8 exclusive hotels in Milan, I suggest a few simple rules to remember:

-at the hotel, men have to enter first, then women;

-your little finger should rest well on the glass;

-after tasting the delicious appetizers prepared by the executive chefs, wipe your mouth before drinking.

Today’s recipe is inspired by a dish that you can enjoy at Park Hyatt Milan.

Recipe. FOR 4 PEOPLE

300 g (10.5 oz) Fassone meat (Piedmont beef) + 1 eggplant + 1 clove garlic + black olives + *Parmesan cheese cream + 4 Piccadilly tomatoes + extra-virgin olive oil + salt + pepper.

*FOR THE PARMESAN CHEESE CREAM: 500 ml (17 fl oz) whole milk + 200 g (7 oz) grated Parmesan cheese + 50 g (1.8 oz) flour + 30 g (1 oz) butter.

Cook the diced eggplant in a frying pan with a clove of minced garlic and a little olive oil. Season with salt and pepper, and when ready, set aside. Chop the meat with a knife, place into a bowl and toss with oil, salt, pepper, pitted black olives and previously cooked eggplant. Stir well and let the ingredients mix for a few minutes. In the meantime, prepare the Parmesan cream in a saucepan by melting the butter. Once the butter is melted, add the flour and stir well with a whisk. At this point, add the warm milk and stir continuously with a whisk. Remove the pan from the heat and add the grated Parmesan cheese, stir well and let stand. Spread a little Parmesan cheese cream on each plate, add the beef tartare (with the help of a stencil) and some cherry tomatoes.
