Recipe. FOR 4 PEOPLE

4 Eggs + 2 large white onions + salt + pepper + extra virgin olive oil.

Preheat the oven to 150°C/302° F). Take some large white onions, peel them and cut into slices about 1.5cm/ half an inch thick. Separate all the onion rings (see picture) and put them to soak in cold water for 10 minutes. Turn on the grill and when hot place onions and cook. We are going to use the outer onion rings, (i.e. the biggest ones) but clearly the rest of the grilled onion we will eat as a side dish. When the rings become soft and lightly toasted (be careful not to break them, especially the outer one that is the most important one for us and therefore you can take it off the grill first) put them in a dish and let marinate for 10 minutes with extra virgin olive oil, salt and pepper. Then place the largest rings into small plates that will go into the oven and break an egg into each of them (note: if you bought big size eggs that look like those of an eagle, they will never fit within our rings, unless it is a genetically modified onion, so try to adjust the doses. For example, I’ve used two rings in order to make more solid “walls”). Put into the oven at 150°C/302°F for 10 minutes or until your egg is baked. Take out of the oven, being careful not to burn yourself. Enjoy!
