Tortino di patateI love this recipe! This soufflé is easy to prepare and very tasty.  I highly recommend this dish when you have many guests, because it does not require much time to prepare and once you bake it, you will be free for about 40 minutes.

For 4 people. 400g (14 oz) yellow potatoes + 1 sprig of thyme + 4 slices of Brie cheese cut into cubes + breadcrumbs + olive oil + salt + pepper.

Wash, dry, peel and finely slice the potatoes. Wash and chop the thyme. Brush 4 aluminum cups with a little oil and sprinkle with bread crumbs. Fill the cups with layers of potatoes, seasoning them with thyme, salt and pepper until you fill the whole cup. Cover with aluminum foil and bake at 180° C (356°F)° for about 40 minutes in the preheated oven. After 40 minutes, remove the aluminum foil, press the potatoes down with a fork and add some Brie cheese on top. Then bake again for another 5 minutes at 200° C (392° F)°.
