Do you fancy a tasty side dish and different from usual? I prepared some delicious potatoes sautéed with chili pepper, black olives and anchovies. Serve with a cheese platter and freshly baked bread. A wonderful recipe!
Recipe. FOR 4 PEOPLE
1 kg (2 lb) potatoes + 150 g (5 oz) black olives + 5 anchovy fillets + 2 tablespoons extra virgin olive oil + 150 ml (5 fl oz) water + salt + pepper + half chili pepper + 1 sprig of rosemary, chopped + water as needed.
Peel, wash and cut the potatoes into chunks. Put them in a pan with two tablespoons of oil and 150 ml (5 fl oz) of water. Cover with a lid and start cooking over high heat, stirring constantly and adding water as needed to prevent them from sticking. After about 15 minutes, the potatoes begin to soften. Then add the olives, anchovy fillets, half chili pepper chopped, chopped rosemary, salt and pepper. Stir and continue cooking for another 15 minutes, increasing the heat at the end of the cooking to create the tasty crust typical of potatoes. So good!
