CHRISTIAN DIOR FW 2014-15 Red berry mousse

The winner is: Dior!

The contest between outfits has just finished: the absolute winner is this fabulous outfit by Dior, which beat Gucci with 74% of the votes against 26%. Now I challenge you: I want you to make a soft dessert that you can be proud to pull out at dinner. Eggs, sugar, red fruits, lemon and other ingredients, mixed with a pinch of magic, will make your table unique!

Recipe. FOR 4 PEOPLE

200g (7 oz) raspberries + 200g (7 oz) redcurrants + 200ml (7 fl oz) whipping cream + the juice of one lemon + 6g (0.2 oz) gelatin sheets.

for the pink meringue: 40g (1.5 oz) egg whites + 80g (3 oz) sugar + 30ml (1 fl oz) water + the juice of half a lemon.

Soak the gelatin sheets in water for about 10 minutes. Wash the fruit and place in a blender with the lemon juice filtered. Blend until the mixture is smooth. Pass the puree through a sieve and put the mixture in a bowl. Put 3 tablespoons of puree in a saucepan and heat. Then add the squeezed gelatine and let it melt, stirring constantly (possibly with a whisk). Then add this mixture to the rest of the puree of red fruits (but keeping less than half aside). Mix well and set aside. Now prepare the meringue. Melt the sugar in a saucepan with the water. In the meantime, whisk the egg whites with the electric mixer until foamy, adding the juice of half a lemon (filtered). Then pour in the syrup of sugar and water, continuing to whisk with the electric mixer until the mixture gets completely cold. Then add half of the puree of red fruits and mix well until the mixture is creamy. Put in refrigerator for 15 minutes. Serve by placing part of the remaining puree and the mousse in glasses (or jars).
