Soft as clouds, delicate like the breeze and tremendously beautiful. Could you ever imagine experiencing all these feelings by eating a slice of toasted bread? If the answer is no, I suggest you follow this recipe: it will make even the most insensitive person in the world become romantic. Pessimists around the globe, this post is meant for you, to convince you that life is not so bad and that if you put aside the thorns, you will discover the roses around you!

Recipe.

200g (7 oz) Pink untreated rose petals + 600ml (20.3 fl oz) water + 500g (17.6 oz) sugar + the juice of half a lemon.

Wash the petals and chop them coarsely with a chopping knife. Put them in a large bowl, add 200g (7 oz) sugar, the juice of half a lemon and mix for 1 minute with your hands. Heat the water with the other 300g (10.5 oz) of sugar, and pour the mixture of roses. Bring to a boil, reduce the heat slightly and continue cooking for about 40 minutes so that the mixture simmers. To remove the foam that forms occasionally use a slotted spoon. How do you know when the jam is ready? Pour a teaspoon of jam on a plate and tilt it: if the jam is ready, it should not run down the plate. Pour into sterilized jars and enjoy your breakfast. This jam is not just for breakfast, but it’s also great served together with fresh cheese, especially goat cheese.
