Recipe. FOR 1 CAKE
250 g (9 oz) kamut flour + 50 g (2 oz) rice flour + 150 g (5.5 oz) brown sugar + 45 g (1.5 oz) bitter cocoa powder + 5 g (0.2 oz) Goji berries + 1 packet of baking powder + 300 ml (10 oz) water + 1 tablespoon of extra virgin olive oil + 50 g (2 oz) dark chocolate to serve.
In a large bowl, with the help of a spoon, mix the flours, sugar, cocoa powder, Goji berries, water and baking powder. Add a tablespoon of extra virgin olive oil and stir until mixture is smooth. Line a baking sheet with parchment paper and pour the mixture, spreading it evenly. Bake at 160° C (325° F) (preheated) for about 45 minutes. Check the cooking with the aid of a toothpick. After baking let cool. Cut the cake into cubes or, as I did, with the help of a pastry ring. Serve with dark chocolate, melted in a double boiler.
