Milan the great, Milan reborn. Take a 140-meter-tall building with a magnificent name (“Diamond Tower”), put the Michelin-starred chef Carlo Cracco in the kitchen and choose a menu by Adam Rapoport (editor of Bon Appétit magazine). What can we get? If my answer was “a sublime evening”, would you believe me? Because it was actually so. During the last fashion week I took pictures, tasted and loved the dishes designed for the gala dinner dedicated to the experts in this field (designers, journalists, directors…). In particular, I fell in love with a dish: prawns marinated in Campari, pepper milk, turnips and lettuce. As you can imagine, the secrets of the chefs are inaccessible, they keep them as if they were the Holy Grail. Practically unreachable, or nearly so, the only information I was able to catch was about red prawns, and these words were said casually: “Red prawns, Campari mixed with water, marinate for 1 day and a half”. I tried and the result is unbelievable. I strongly recommend you try them with some crispy salad and white turnips. Oppa Cracco Style! Bon Appétit!
Recipe. FOR 4 PEOPLE.
12 fresh red prawns + 2 white turnips + 500ml (17 fl oz) Campari + 100ml (3.4 fl oz) water + arugola + crunchy salad + olive oil + salt + pepper.
Clean the prawns, removing the head and shell. Put the prawns in a clean glass container and cover with the solution of Campari and water. Cover with plastic wrap and place in the fridge to marinate for 1 day and a half. When ready, drain the prawns and pat dry with care using paper towels. Arrange on a plate and add a few leaves of arugula and crunchy salad and turnips peeled and cut into small pieces. Add a drizzle of extra virgin olive oil with salt and pepper.
